Early in my culinary career I taught cooking classes. Some lessons focused on preparing pasta from scratch. At the time it was a popular topic because fresh pasta wasn’t sold in the marketplace. Now a wide range of fresh pastas are commonplace in supermarkets, including tortellini that are stuffed with three cheese varieties.
These little stuffed wonders are delicious in a quick-to-make soup, a welcome emergency meal when time is tight.
